"We do offer a 'fresh' mozzarella to top the pizzas with, and also carry goat cheese and a vegan soy cheese if you would like to try something a little different.  Gluten free salads, brownies, and beer round out our gluten free menu options, so come hungry!  If you have any other questions about our menu or our concept, please do not hesitate to ask.

"My husband and I just got home from a 10 day trip to San Diego! We had a great time. . . Pizza Fusion was great.  My husband (who has no food allergies but is a champion and will eat everything I eat!) and I went there for lunch.  We were greeted by a very happy and bubbly young man.  He sat us and then proceeded to ask us if we were gluten free or vegan.  After answering yes to Gluten free and yes to other food allergies, he sat down with us and showed me on the menu what I could and couldn’t have.  He walked me through the steps that the kitchen takes with the Gluten free pizzas to assure me that there would be no cross contamination.  They use a totally different section of the restaurant for GF prep and cooking, even the toppings are prepared separately.  He was great.  Having food allergies makes eating out very complicated and difficult, not to mention it makes me feel uncertain and scared sometimes.  Pizza Fusion did a tremendous job of alleviating any fears that I had about getting sick from what I was going to eat!  And the food was SOO good!  It was such a blessing to have "real pizza" again! We liked it so much we got take out later in the week!  When we went back in the same man who was waited on us before, remembered us and asked how we were and how we like San Diego, etc!  10 out of 10 in my book for service and food!" "Pizza Fusion: Everything we tried here was SO good...even my non gf (vegetarian) boyfriend loved it so much we had to come back a second time! We had the gf pizza with red sauce, mozz cheese, artichoke, roasted garlic and carmelized onions...sensational. I also had some of the gf beer, and the gf brownie was to die for! "My daughter and I had lunch at Pizza Fusion today. It was delicious. Their food is really "gourmet" with all fresh, organic ingredients. It is relatively expensive for a pizza place ($18-$22 +$5 for the gf crust), but we ordered a salad and pizza to share, and it easily would have feed 3 and maybe 4 people. It's a thin crust, so the toppings are the main show. There are a few pizza toppings and a salad dressing that are not gluten-free, so be sure to ask." Roxie (and Karen) 8/8

To the listserv in 6/08 "Before going (to Pizza Fusion in Pennsylvania) I had spoken with the manager/chef, Paul. He was very knowledgeable and made me feel very comfortable with issues pertaining to cross-contamination. The dough for all locations is made off-site in a completely gluten free location. The pizza is created in a separate room/area of the kitchen that is free of regular flour. The gluten free pizza is cooked on the top shelf of the pizza oven. He was so accommodating and knowledgeable. He urged me to call first thing in the morning of the day I was coming to order the toppings for the pizza, so that they could be set aside, since the toppings could be contaminated when regular pizzas are being made. They are reluctant to make gluten free pizzas if your topping requests are not called in earlier in the day.

I have a whole milk allergy (not a lactose allergy). They use mozzarella that is a blend of part-skim & whole milk mozzarella, but they did have a part-skim mozzarella cheese that they were able to substitute. They also have soy cheese they can use. Even the pizza cutter is clearly kept in a separate box that is marked gluten-free.

The pizza was wonderful. My first Pizzeria Pizza since being diagnosed over 6 years ago!!! And I tend to be very sensitive to even minimal contamination and almost never eat out."
