This family-style restaurant does eat-in, take-out, or delivery. The following email was received on 6/30/11. They will email you the gluten-free menu upon request, as it is not on their website as yet.
"We are the new owners of Today’s Pizza and Salad Restaurant, a family owned restaurant located in Encinitas, and we wanted to introduce ourselves to your organization because we now have a full menu of items that are gluten free along with our regular items.
I am personally aware of the impact it makes when a loved one is diagnosed with being a Celiac, or has any gluten sensitivities, my sister is a Celiac, my mother is extremely gluten sensitive and I have to be careful how much gluten I intake.
We were lucky enough to be able to attend a huge Pizza Expo where we had the opportunity of tasting all the gluten free products, we were most excited to meet Liz from “Still Riding Pizza” who had the best tasting gluten free pizza base and simply fabulous pasta, which we are excited to be serving in our restaurant. Liz is a Celiac herself and wanted to come up with a safe and tasty product.
At Today’s we do things a little differently, we make nearly all our pizza, pasta and salad dressings, we use only top quality products and there are no fillers, so we can offer you a vast array of delicious gourmet products that are gluten free.
Since we wanted to give our customers the total Today’s experience we had to add GF chocolate chip cookies to or menu. I took a trip back to Australia (I am an Aussie) where my sister and I baked tirelessly for 2 days trying to come up with yummy cookies. Well I am glad to tell you we did it, I think we do have the best gluten free cookies that you will have tasted.
Today’s is a large but cozy restaurant (we can seat around 100) that has been newly decorated and we would love for you to come in and check us out. We are located off the I-5 and Santa Fe Drive, in the new Vons Centre across from Scripps.

Wanted to share another delicious Gluten Free pizza & pasta place, Today's Pizza & Salad in Encinitas. I spoke to the owner and they have been trained by the pizza crust manufacturer on safe food handling for Gluten Free. We've been taking our kids teams here for years and it has always been a great family restaurant with very good food.
We tried it and my 11 year old son loved it! The best part about the gluten free pizza is that it's 14", not individual size. We had some to take home! The pasta was delicious, also. They have 16 gluten pizza choices, 6 gluten free pasta choices (even meatballs) and gluten free beer! They were in the process of adding a gluten free cookie a week ago. Not sure if that has been added, yet. They are across the street from Scripps Hospital Encinitas. Delivery is available.
